2 c self-rising flour
2 c sugar
1 tsp soda
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp salt
1 tsp vanilla
4 eggs
1 c vegetable oil
1 qt. canned sweet potatoes or 2 c mashed
1 c nuts
Mix all ingredients on medium speed for 3 minutes, scraping sides constantly. Bake at 350 degrees in bundt or rectangular pan until wooden pick comes out clean.
Cream Cheese Frosting:
1 stick butter
1 lb 3x sugar
8 oz cream cheese
1 tsp vanilla
Mix all ingredients at room temperature. Experiment with spices.
